Clyde River Oysters with Nashi Pear and Finger Lime Salsa

Ingredients

12 fresh oysters
 

Nashi Pear and Lime Salsa:

1 nashi pear, finely chopped

3 finger limes, flesh only

5 spring onions, finely chopped

½ tsp white wine vinegar

Sprinkle of salt

Generous sprinkle of pepper

1 tbsp. extra virgin olive oil

Method

In a bowl, mix together all the salsa ingredients. Serve a generous spoonful on top of each oyster.
