Crown Roast Lamb

  •  2 lamb racks
  • 4 white potatoes, thinly sliced
  • 6 carrots
  • 200 ml unsalted butter, melted
  • Salt and pepper
  • Extra virgin olive oil 

Preheat oven to 200 degrees.

Remove any sinew from the lamb racks. With twine, tie the racks together, then turn them around on themselves to form a crown. Run twine around its entirety to hold it firmly together. Secure with a skewer, pop on a baking tray, add a splash of oil, a sprinkle of salt and pepper and cook for 25 - 30 mins. In a bowl, toss the potato slices through the melted butter. Layer the potato slices onto a baking tray lined with baking paper and cook at 220 degrees for 10 mins.
