Fig and Coconut Oats

Ingredients

650 g oats

300 g coconut flakes

1/3 cup pepitas

11/2 cups almonds

1 1/2 cups cashew nuts

1 cup pecans

1 cup macadamia nuts

5 tbsp honey

400 ml coconut oil

250 g dried figs, roughly chopped

Method

Preheat oven to 180°C.

In a bowl, mix together the oats and nuts, then fill a baking tray with the mix.

Whisk together the honey and coconut oil, then pour over the oat mix. Stir to combine, then bake for 25 – 30 mins. Once baked, scatter over the figs and serve.
