Fish Stock

1 kg frozen fish (any type)

1 brown onion, quartered

1 clove garlic

2 sticks celery, roughly chopped

2 carrot, roughly chopped

3 sprigs parsley

Salt and pepper

2 L water


Into a deep pot, add all the ingredients with a generous sprinkle of salt and pepper. Bring to the boil, then simmer for an hour.
