Four Cheese Omelette

4 eggs
20 g butter
60 ml thickened cream
20 g brie cheese
20 g cheddar cheese
20 g provolone cheese
20 g cream cheese
Unsalted butter


Whisk together the eggs and cream. Into a hot pan, add a good knob of butter, melt and pour in the eggs.

Cook to slightly set, then tumble in the cheese and cook for 2 mins or so.

Flip one side over, cover with a lid and leave to sit for 2 mins.

Serves 2
