Fruit Loaf

  • 700 g mixed dried fruit
  • 600 g plain flour 
  • 1 tsp salt
  • 1 tsp caster sugar
  • 1 tsp dry yeast
  • Orange juice 

Preheat oven to 180 degrees.

Soak the fruit for 3 hours or overnight in orange juice. Mix together the dry ingredients, 200 ml water, knead, wrap in cling film and set aside to double in size.

Drain any excess liquid from the fruit, then press the dough out, scatter over the fruit, gently knead to combine, wrap in cling film and set aside for another hour. After an hour, knead a further time, fill a baking tin with the dough, set aside for a further 1/2 hour, then pop in the oven for 25 mins.
