Fruit Mince and White Chocolate Tart

4 sheets filo pastry
2 cups mixed dry fruit
100 g white chocolate cooking buttons
1 egg
100 g unsalted butter, cubed


Preheat oven to 190°C.

Melt the butter in a pan, then remove about half and set aside. Tumble the dried fruit into the pan, stir to combine with the butter and cook for 5 mins. Stir through the white chocolate until mostly melted, then pour into a food processor with 1 egg and blitz to combine.

Lay 2 sheets of filo together. Brush with butter, fold in half and brush again. Cut into four squares, then place 2 squares each into 2 shallow ramekins or small tart tins. Repeat the process. (4 tarts in total).

Brush edges with butter, then fill with fruit mince white chocolate mixture.

Bake for 15 – 20 mins
