Ingredients

 
600g potatoes peeled and diced
220g plain flour
 

Method

 
Cover your potatoes with water and bring to a boil and simmer for 30 minutes.
 
Drain well and allow to dry.
 
Pass the potatoes through a sieve then mix well with enough flour to form a dough.
 
Roll the dough out to a sausage then cut into 3 cm pieces and roll with a fork.
 
Drop into boiling salted water and cook for 3-5 minutes.
 
They will float when they are cooked, then spoon over your favourite sauce.
