Golden Syrup and Mixed Fruit Pudding

100 g dried mixed fruit
100 g unsalted butter, cubed (extra for greasing)
100 ml golden syrup
3 eggs, whisked
320 g self-raising flour
3/4 cup cream


Preheat oven to 190°C.
Grease a silicone bunting dish or cake tin with butter. Into a pan, tumble in the fruit and butter. Cook until shiny and the fruit has softened
In a bowl, whisk together the eggs and golden syrup. Combine with the flour, stirring thoroughly. Combine the fruit mixture with the batter, stir to combine and pour into bunting dish/cake pan. Level the surface and cook for 20 mins.
Set aside to cool once cooked.
Drizzle over the cream and serve.
