Honey Poached Peach Dumplings

1 tin peaches, drained ( save the juice for poaching)
150g smooth ricotta
2 drops vanilla extract
150g almond meal
250g arrowroot
100ml. milk
1 egg
2 tbsp honey


Roughly crush the peaches and mix together with the vanilla, almond meal, arrowroot, the egg and milk
Pour the peach juice into a saucepan and add 200ml water
Roll the peach mixture into balls and place into the poaching liquid
Place on a lid, bring to a simmer and simmer for 15-20 minutes.
Drizzle with honey and serve with ice cream.
