Leeky Beef Canneloni

(Serves 4)


300g minced beef
2 cloves garlic
½ Spanish onion
1 leek, root and top woody leaves removed
2 tbsp tomato paste
500ml beef stock
Pinch of paprika
Pinch of dried basil
¼ cup breadcrumbs
¼ cup grated cheese


Cut the leek in half, lengthways. Take the larger outer leaves and place them in an ovenproof pan, poach them in the beef stock until just tender. Chop the inner smaller leaves and mix with the minced beef
Finely chop the onion and garlic and mix with the beef, paprika and basil.
Place the poached leek strips on the bench, spoon the beef mixture onto one end of the leaf and roll into sausage shapes. 
Mix together the poaching stock with the tomato paste then pop in the leek rolled beef pieces, seam side down.
Sprinkle with breadcrumbs and cheese, then bake at 200oC for 30 minutes.
