Mango Chicken

2 chicken breast

400 ml mango nectar

2 red chilli, roughly chopped

2 parsley sprigs, leaves only

2 cloves garlic, roughly chopped

1 brown onion, roughly chopped

2 sticks celery, sliced

2 carrot, sliced

1 cup rice

500 ml chicken stock

400 ml mango nectar

Extra virgin olive oil

Salt and pepper


Cover the chicken breasts in a good splash of oil and a generous sprinkle of salt and pepper.

In a deep pan, seal the chicken on both sides. Add the vegetables and rice, pour in the mango nectar and stock, then simmer for 15 mins.

Remove the chicken once cooked, slice in strips and serve on top of the vegetables and rice. Garnish with parsley.
