Nashi Pear and Vanilla Omelette

1 nashi pear, ½ cm slices
1 tsp. vanilla paste
100 ml thickened cream
Unsalted butter
1 tbsp. cornflour
100 g sugar


Coat the pear slices in sugar. Into a warm pan, add a good knob of butter and slide in the pears. Cook until caramelised.

Thoroughly whisk together the eggs, cornflour, vanilla, cream and a sprinkle of sugar.

Pour over the pears and cook until the egg is firm.

Slide onto a plate and serve.
