1 tuna steak
14 baby chat potatoes, skin on and quartered
150 g green beans
¼ red onion, finely sliced
1 cup black olives, roughly chopped
Salt and pepper
Extra virgin olive oil
¼ red onion, finely chopped
1 tbsp. baby capers, roughly chopped
1 tbsp. white wine vinegar
3 tbsp. extra virgin olive oil
Whisk together the dressing ingredients until the oil emulsifies, then set aside.
Boil the potatoes in salted water until cooked through. Boil the beans in the same water for 2 mins or so.
Sprinkle the tuna with salt and pepper, then grill to the desired degree. Slice in strips once cooked.
Onto a platter, place the potatoes, beans, olives, onion, sliced tuna and drizzle with dressing.
Serves 3 - 4
