Old Man Saltbush Stuffed Cevapcici

500 g beef mince
200 g Bodalla Old Man Saltbush cheese
½ red onion, finely chopped
4 cloves garlic, finely chopped
1 tbsp. smoked paprika
1 cup red wine
1 egg
1 cup breadcrumbs
Extra virgin olive oil


In a pan with a good splash of oil, fry the garlic and onion. Sprinkle in the paprika, pour in the wine and reduce by half. Once reduced, combine in a bowl with the mince, egg and breadcrumbs. Massage thoroughly to combine. Cut the cheese into thick strips and mould handfuls of mince around them. Shallow-fry until cooked through.
