Penne Amatriciana

Sauce:

3 slices streaky bacon, roughly chopped

½ red onion, roughly sliced

1 red chilli, roughly chopped

400 g tinned tomatoes

¼ bunch fresh basil

½ cup freshly grated parmesan

Salt and pepper

Extra virgin olive oil

Pasta:

250 g flour

2 eggs

Method

In a pasta machine, add flour, 2 eggs and attach the penne fitting. Form into pasta, then cook in boiling salted water.

In a pan with a good splash of oil, fry off the bacon, onion and chilli. Add a sprinkle of salt and pepper, then pour in the tomatoes, a splash of water and scatter in the basil. Simmer for 10 mins or so, then toss through the pasta, cover with parmesan and serve.
