Quick Pickled Apple and Cider Chicken

1 kg chicken
500 ml cloudy apple cider
4 bay leaves
1 green chilli, cut into thirds
1 green apple, roughly sliced
1 stick celery, roughly chopped
Sprinkle of salt and pepper

Handful macadamias, roughly chopped
4 radish, roughly chopped
1 green apple, roughly cubed
2 tbsp. mayonnaise
Sprinkle salt


Preheat oven to 180°C.

Into a baking dish, combine the chicken roast ingredients and bake for 50 mins. Once cooked, remove and slice. To make the sauce, pour the remaining juices and contents from the baking dish into a food processor. Blitz thoroughly to combine.

In a bowl, combine the salad ingredients and stir thoroughly. Pop everything onto a platter, drizzle the chicken with sauce and serve.
