Sage and Onion Chicken

2 chicken breast

10 fresh sage leaves

½ brown onion

2 cloves garlic

10 green beans

3 tbsp. cottage cheese

4 rashers bacon

2 slices bread

30 g unsalted butter

Extra virgin olive oil



Preheat oven to 210°C.

To make the filling, in the food processor blitz the bread with a sprinkle of salt and pepper until it forms a crumb, then remove and set aside.

Blitz the onion, garlic and sage until smooth. Add cottage cheese, breadcrumbs and stir thoroughly to combine.

Cut a pocket in each chicken breast, stuff with filling, wrap with bacon and seal in a hot pan with a good splash of oil. Pop into a baking dish and cook for 15 mins.

Once cooked, pour the baking dish juices into a pan. Tumble in the beans and bring to the boil. Stir through the butter and serve on top of the chicken.
