Ingredients
2 tbsp. round-leaf mint leaves
½ cup sour cream
½ cup beetroot relish
Pancake Mix:
1 cup plain flour
1 cup milk
1 egg
½ tsp. ground saltbush
2 tbsp. warrigal greens, roughly chopped
Sprinkle of ground pepperberries
Method
In a large bowl, thoroughly mix together the pancake ingredients. Cook spoonfuls of the mixture in a pan on gentle heat.
Set aside to cool for 5 mins, then spread with sour cream, beetroot relish and garnish with round-leaf mint.
