Smoked Paprika Grilled Sardines

20 fresh sardines, cleaned and spine removed
3 cloves garlic, roughly chopped
½ red onion, finely diced
400 g tinned crushed tomatoes
1 loaf crusty bread, sliced
Salt and pepper
2 tbsp. smoked paprika
Extra virgin olive oil
½ cup water


In a pan with a good splash of oil, fry the onion and garlic. Sprinkle in some salt, pepper and 1 tbsp. paprika. Cook until slightly soft, pour in the tomatoes, water and simmer until thick.

In a bowl, add a good splash of oil, a generous sprinkle of salt and the remaining paprika. Thoroughly toss the sardines through the mixture, then grill in a pan or on the BBQ until cooked through.

Layer the bread with the tomato sauce and sardines.
