Steak Tartare

300 g eye fillet beef, finely chopped

4 gherkins, finely chopped

2 tbsp capers, finely chopped

3 shallots, finely chopped

1 ½ tsp tabasco

Sprinkle of salt and pepper

1 tsp mustard powder

½ tsp white wine vinegar


1 egg yolk

Handful chives, finely chopped

1 packet bread bagelettes


In a bowl, mix together all the tartare ingredients.

On a plate, mould the mix into a dome and refrigerate for 20 mins.

Once cooled, place egg yolk on top, garnish with chives and serve with bagelettes.
