Sticky Date Pudding

300 g pitted dates
200 g self-raising flour
600 ml thickened cream
150 g caster sugar
150 g brown sugar
3 eggs, whisked
100 g butter (extra for greasing)


Preheat oven to 200°C.
Into a warm pan, tumble in the dates, sprinkle in the sugar and pour in enough water just to cover. Bring to the boil, then reduce for 10 mins or so. Once done, remove and set aside.
In the same pan, sprinkle in the brown sugar and a small splash of water. Cook until the sugar melts, then pour in the cream. Simmer until creamy and a pale caramel colour.
Into a bowl, mix together the flour and egg. Add the date mixture and stir thoroughly to combine. Level the surface, pour into a baking dish and cook for 20 mins.
Once cooked, set aside to cool, then pour over the sauce and serve.
