Stuffed Mushrooms

5 large field mushrooms
3 strips bacon, roughly chopped
2 sprigs dill, torn
3 tbsp. cottage cheese
2 red chilli, finely chopped
2 spring onions, finely chopped
Extra virgin olive oil
Salt and pepper


Preheat oven to 230 °C.

Remove the stems of the mushrooms and set aside. Drizzle the mushrooms with oil, a good sprinkle of salt and pepper and cook in the oven until soft.

Roughly chop the stems of the mushrooms and add to a hot pan with the bacon and a splash of olive oil. Cook until the bacon is slightly crispy, then add the chilli, spring onions and cook for a further 2 mins. Once cooked, spoon the bacon mixture into a bowl with the cottage cheese. Stir thoroughly.

Spoon the mixture into the mushrooms, garnish with dill and serve.
