Sweet and Sour Meatballs

500g minced beef
1 bunch of spring onions
1 tsp crushed garlic
1 tsp ground ginger
3 tbsp flour
Splash oyster sauce
1 egg
1 red capsicum
1 green capsicum
1 small can of chopped pineapple (and juice)
1 tsp chili paste
1 tbsp Arrowroot
1 stubby of beer
Salt and pepper
100g arrowroot
100g plain flour
2 cups of water
2 litres canola oil (for deep frying)


Finely chop half the spring onions and mix with the minced beef, add 3 tbsp flour, ½ tsp. ground ginger the egg then combine the mix and form into balls. Place in the fridge for at least ½ an hour
Chop the other half of the spring onions into 3cm. batons and chop the red and green capsicum into 3cm. dice then fry all together with 1 tsp. crushed garlic, ½ tsp. ground ginger, oyster sauce and 1 tsp. chilli until just starting to soften then add a stubby of beer and the can of pineapple (with the juice) and simmer for 10 minutes then thicken with arrowroot
Combine the arrowroot, flour and the salt and pepper in a large bowl, add water, then whisk until a batter is formed.
Lightly dust the meatballs with flour then dip into batter and deep fry until crispy then serve with sweet and sour sauce.
