Tempura Beef with Spicy Plum and Onion Sauce

180 g eye fillet beef, sliced in strips

Canola oil

Sea Salt flakes


1 ½ cups cornflour

1 ½ cups plain flour

½ tsp sea salt flakes

Soda water, chilled

Dipping Sauce:

3 tbsp plum jam

3 tbsp sesame oil

3 spring onions, finely chopped

½ red onion, finely chopped

3 red chilli, finely chopped

1/3 cup water

1/3 tsp sea salt flakes

Extra virgin olive oil


In a bowl, whisk together the batter ingredients with enough soda water to form a runny, frothy consistency. Sprinkle the beef slices with salt, coat in batter and shallow-fry until crispy.

In a pan with a splash of oil, fry off the dipping sauce vegetables. Add the remaining ingredients and reduce to a thick sauce. Place the beef onto a platter, sprinkle with salt and serve with dipping sauce.
