Toad in the Holenuts

  • 6 thin sausages
  • 3 eggs
  • 300 g plain flour 
  • 2 tbsp semi-dried tomatoes, roughly chopped 
  • Apple cider
  • Sunflower oil 

Remove the sausage skin, roll the mince into balls and fry in a pan with a good splash of oil, then remove and set aside to cool. 

Thoroughly mix together the flour, eggs, tomatoes and enough cider to form a smooth batter. Add the sausage balls, stir to combine and slide spoonfuls of the mixture into a pot of hot vegetable oil and cook until golden. 

Makes 8 - 10
