Tomato Sauce

690 g tinned tomatoes
1 ½ cups red wine
2 red onions, finely diced
2 sticks celery, finely diced
1 whole head garlic, finely chopped
½ bunch basil
140 g semi-dried tomatoes
½ L water
Salt and pepper
Extra virgin olive oil


In a deep pot with a generous splash of oil, fry off the onion, celery, garlic and semi-dried tomato. Once soft, pour in the tomatoes, wine, water and scatter in the basil. Bring to a boil, then simmer for 1 ½ hrs. Remove basil once cooked.
