White Bait Stir Fry

400 g white bait fish
400 g hokkien noodles
3 spring onions, roughly sliced
3 baby carrots, halved and thinly sliced
10 green beans, halved
100 g bean sprouts
1 red chilli, roughly sliced
1 tbsp. ginger, grated
3 tbsp. sweet soy sauce
4. tbsp. soy sauce
¾ cup water
2 heaped cups plain flour
Extra virgin olive oil


Coat the white bait in the flour. In a deep pan with a generous amount of oil, fry batches of the white bait. Remove and set aside.

Fry the spring onions, chilli and ginger for 2 mins, then add the beans, carrots and noodles. Cook for 5 mins, pour in the sauces, water, scatter in the bean sprouts and toss to combine.

Serve the noodle mixture on a platter, scatter over the white bait and serve.
