Banana and Date Sticky Tart

4 bananas
200g semi-dried dates
100g brown sugar
1 sheet Borg’s Shortcrust Pastry
4 eggs
50ml water


1. Line a flan tin with the pastry, prick and blind bake at 180c for 10 minutes.

2. In a saucepan combine the dates, water and sugar and bring to a boil, then simmer for 20 minutes or until the dates have broken down.

3. Strain out the date stones and allow to cool.

4. Slice the bananas and line the blind baked pastry.

5. Once the date and sugar mixture has cooled mix in the eggs, then pour the datey egg mix on top of the bananas and bake in oven at 180c for 40 minutes.
