Banana Semi-Freddo

500g peeled bananas
300ml thickened cream
2 tbsp honey
300ml whole cream milk
1 vanilla pod
150g icing sugar
2 eggs


1. Place bananas, honey and eggs into a blender and pulse until smooth.

2. In a small sauce pan combine the milk, thickened cream, icing sugar and vanilla pod and gently simmer for 10-15 minutes.

3. Allow the milk mix to cool then remove the vanilla pod. Combine milk mix with the banana/egg/honey mix and fold together until smooth.

4. Pop the whole thing in the freezer for two hours then remove and stir well, place back in the freezer until time to serve. Scoop into a glass like ice-cream.
