Beer Roast Chicken

1 whole chicken
1.5ltrs of beer
½ a cup of curley parsely
½ a cup of flat leaf parsely
6 spring onions
2 cloves of garlic
2 tomatoes
1 can of peaches
½ a cup of pecorino cheese
1 zucchini


1. Roughly chop the parsley, spring onion, tomato and garlic, and then place into a mixing bowl.

2. Drain the peaches and crush with your hands into the bowl, add ½ cup of grated pecorino and grated zucchini, mix well then add a good splash of olive oil.

3. Stuff the cavity of the chicken with the mixture, place into a roasting tray and add about 1 litre of beer.

4. Bake at 220c for about 1 ½ hours, adding more beer after about 40 minutes.

5. Serve with the beer Jus (you can thicken with 3 tbsp. cornflour and 3 tbsp cold water if required.)
