Buffalo Chicken and Tomato Salad

2 chicken breast
220g Bocconcini (or 4 large Buffalo Mozzarella)
2 large tomatoes
½ bunch of basil, shredded
1 cucumber
1 cos lettuce, cut the top off
1tbsp mayonnaise
Juice and zest of lime
1tsp sweet chilli sauce


1. Slice the chicken breasts into 3 cm pieces and mix with half the lime juice and zest, allow to marinate for about 10 minutes.

2. Cut the tomatoes and mozzarella into 2 cm slices.

3. Separate the lettuce and finely shred the smaller leaves, chop the cucumber.

4. Grill the chicken on a hot grill pan for 5 minutes each side.

5. Mix together the remaining lime juice and zest with the mayonnaise and sweet chilli.

6. Lay the chicken alternately with the tomato, bocconcini and basil, serve on a large lettuce leaf with shredded lettuce and cucumber.
