Chicken Soup

1 whole chicken
1 brown onion, roughly chopped
1 stick of celery, roughly chopped
1 carrot, roughly chopped
1 tsp ground ginger
1 tsp crushed garlic
¼ preserved lemon
Salt and pepper
4-5 litres cold water
Coriander, to garnish
Parsley, to garnish


1. Place all ingredients into a large saucepan and cover with water, bring to a boil with the lid off, when boiling turn down to a very low simmer and cook for ½ an hour.

2. After ½ an hour of simmering pull the breast meat away from the chicken and set aside, continue cooking with a lid on for at least 2 hours.

3. Strain the soup well and serve with shredded chicken breast, chopped parsley and coriander.
