Creamy Mustard Mussels with Mixed Bean Salad

Ingredients

100g green beans
100g yellow beans
100g snow peas
2 shallots
1 clove of garlic
500g mussels
1 glass of white wine
2 tbsp French mustard
200ml cream

Method

1. Trim and blanche the beans and snow peas.

2. Chop the shallot and garlic and fry in hot pan until soft,. Then pour in the wine, bring to a boil then add the mustard and cream.

3. Add the mussels to the boiling cream mix, place on a lid and cook for 5-8 minutes or until all the mussels are opened (discard any that do not fully open).

4. Serve on the beans and pour over hot creamy mustard sauce.
