1 Bakers Delight Cape Seed Loaf (sliced)
150g smoked ham (medium slice)
100g cherry tomatoes
½ Spanish onion
½ cup basil, shredded
1 tbsp Always FreshExtra Virgin Olive Oil
1 tbsp Always Fresh White Balsamic Vinegar
1 tbsp French mustard
Always Fresh Extra Virgin Olive Oil Spray


1. Remove the crusts from each slice of bread then roll out to half its thickness (using a rolling pin.)

2. Using a pastry cutter, cut the thinly sliced cape seed slices into circles.Spray a muffin tray with oil, then press the bread circles in, then bake at 190c for about 10 minutes or until crispy.

3. Mix together the oil, mustard and vinegar to form a dressing.

4. Chop the ham, onion and tomato, then toss together with the dressing and a grate of cracked pepper, fill each tart case with this mixture then sprinkle with shredded basil.
