Pane di Casa Eggy Breakfast

1 Pane di Casa loaf, sliced
3 eggs
50ml of cream
6 slices of prosciutto
50g butter
2 tomatoes (peeled)
Olive oil


1. Mix the eggs and cream together until smooth.

2. Butter one side of the Pane di Casa, lay down a slice of prosciutto and top with sliced tomato, sprinkle with cracked pepper, place on another buttered slice of bread and press firmly.

3. Heat a fry pan to a medium heat and add a splash of oil. Dip the sandwiches into the egg mixture and press down, allow the bread to absorb a little of the egg mixture. Turn the sandwich to coat the other side with egg before frying both sides.
