Gummy Goujons

500g gummy shark fillet
200g breadcrumbs
1 tsp. spicy pepper
1 egg
100g plain flour
400ml canola oil

Tartare sauce
4 tbsp. whole egg mayonnaise
8 cornichons ( baby gherkins)
8 capers
1 tsp. chopped parsley
A squeeze of lemon juice


1. Cut the fish into 2 cm. wide strips along the fillet as long as you can.

2. Add the spicy pepper to the breadcrumbs then dredge through flour, egg and breadcrumbs.

3. Fry in hot oil until crispy and golden brown

4. Roughly chop the cornichon, capers and parsley together then mix with the mayonnaise and lemon juice and serve with the crispy gummy goujons
