Peking Salmon

Ingredients

300g fillet Atlantic salmon
1 bunch spring onion finely shredded
2 long green chillies sliced
1/2 bunch of coriander
200g beansprouts
1 finely shredded carrot
100g snow pea tendrils
1 tsp tamarind paste
50ml Kikkoman teriyaki marinade
50ml Kikkoman lime lemon grass and soy marinade
50ml Kikkoman roast garlic marinade
50g caster sugar

Method

1. Combine all marinades in a bowl, add the tamarind paste then smear all over the salmon, allow to sit for at least 20 minutes then bake in a hot oven at 250C for 10 minutes.

Pancakes

Ingredients

100g plain flour
100g rice flour
100g cornflour
2 egg whites
100ml water
Pinch of salt

Method

1. In a non-stick pan make the thinnest crepes you can.

2. Serve on a platter with the shredded onions, chillies, coriander, beansprouts, carrots, snow pea tendrils and cooked salmon.

3. Place a little bit of everything into a pancake roll and eat.
