Poached Chicken and Rice

2 chicken breast cut in half lengthwise
1 can of coconut cream
1 litre mixed Vegeta stock
2 sticks celery finely chopped
2 cloves crushed garlic
1 finely chopped onion
1 carrot finely chopped
1 chopped red chilli
1/2 knob ginger finely chopped
200g basmati rice
2 zucchini cut into 1/4
2 carrots cut into 1/4


1. Pour raw rice straight into a baking tray and mix in the finely chopped ingredients.

2. Pour over stock and coconut cream then place the sliced chicken on top, pop the 1/4 carrots and zucchinis on top.

3. Cover with foil (seal well) and bake at 230-250C for 30 minutes.
