Southern Fried Chicken

1 chicken breast (sliced thinly)
½ tsp ground ginger
½ tsp paprika
Pinch cinnamon
½ tsp McKenzies Garlic and Herb seasoning
1 tsp cayenne pepper
4 eggs (mixed)
100g rice flour


1. Combine ½ of the spice mix into rice flour.

2. Combine the other ½ of the spice mix with the eggs and mix well.

3. Toss chicken into dry spice mix then egg mix, drip off excess then shallow fry in 1.5 litres of canola oil at 180C.
