Spicy Fried Lamb Salad

Ingredients

2 lamb backstraps
50ml olive oil
2 tbsp dried chilli
1 tbsp mixed spice
1 green mango, peeled
½ bunch coriander
½ bunch purple basil
½ bunch of watercress
½ Spanish onion, finely sliced
½ cucumber, sliced
Juice of 1 lime

Method

1. Combine the olive oil, chilli and mixed spice in a bowl then smear over the lamb straps and allow to marinate for ½ an hour.

2. Grate the green mango into a small bowl, add the finely sliced Spanish onion and the lime juice then massage together a couple of times to soften the onions and combine the flavours.

3. On a hot grill plate cook the lamb for 5 minutes each side then rest for 5 minutes.

4. Toss the herbs, cucumber and watercress together with the mango/onion mix. Slice the lamb and serve on top of the salad.
