Suva Meatballs

500g minced lamb
2 tsp crushed garlic
4 sprigs of rosemary, no stalks and chopped
1 brown onion, finely chopped
1 glass of white wine
4 tbsp extra virgin olive oil
2 tomatoes, finely chopped
¼ cucumber, finely diced
¼ bunch of mint, finely shredded
100g roquet
Salt and pepper
Splash extra virgin olive oil
Squeeze lemon juice
50g Natural yoghurt


1. In a large bowl combine the lamb, garlic, rosemary and onion and salt and pepper. Then form into sausages and place into an oven tray, cover with the white wine and olive oil then roast at 200 degrees for 20 minutes.

2. Place tomatoes, cucumber, mint and roquet into a bowl. Toss together with a splash of oil and a squeeze of lemon.

3. Serve the Suva meatballs rolled in flat bread, with a smear of yoghurt and the salad.
