Apricot and Almond T Cake (GF)

1 cup dark brown sugar
3 eggs
400g tin apricot halves in syrup, drained
100g flaked almonds
100g almond meal
100g arrowroot
125g mascarpone cheese


In a mixer, whisk the brown sugar and eggs together until light and fluffy.

Add the mascarpone, almond meal, arrowroot and half of the flaked almonds and fold together until just combined.

Grease a 23cm spring form cake tin and pour the cake mixture in.

Sprinkle over the remaining flaked almonds and lightly press the apricot halves into the top of the cake.

Bake in a preheated oven at 180°C for 45-60 minutes.
