Baked Ham & Scalloped Potato

(Serves 6)

1kg leg ham, sliced chunky
5 medium potatoes, peeled and sliced
1 large brown onion, finely sliced
1 litre milk
80-100g sliced cheddar cheese
150g plain flour
25g cubed butter
Handful of curly parsley, chopped


Pour the milk into a saucepan and bring to a gentle simmer. Use some of this milk to whisk into the flour to make a runny slurry.

Add the butter to the milk and stir through.
Slowly drizzle in the slurry whilst whisking, until a thick saucy consistency is reached. Keep whisking until sauce comes to the boil.

In a large casserole dish, line with slices of ham. Layer with potato and onion, followed by a layer of cheese. Continue layering, then lightly press all the ingredients down.

Stir the parsley through the white sauce and pour over the ham and scallop bake.
Sprinkle with cheese and bake in a preheated oven at 180°C for 40 minutes.
