Banana Brioche Trifle

Ingredients

(Serves 2)
3 bananas
1 tin (410g) strawberries
600ml thickened cream
4 brioche
2 drops vanilla essence
2 tbsp caster sugar
30ml rum
Juice of 1 lime
Mint to garnish

Method

Whip the cream, sugar and vanilla together until stiff.
Blend the strawberries until smooth then stir through the rum.
Slice the brioche into 1 cm slices.
Slice the bananas on an angle then pour over the limejuice.
Dip the whole sliced brioche into the strawberry mix until soaked.
Alternately layer the brioche with banana and cream for 4 layers.
Drizzle with a dash of strawberry mix and garnish with mint leaves.
