Banana & Caramel Friand

(Makes approx. 10-12)

4 bananas (1 sliced for garnish, 3 roughly chopped)
200g self raising flour
200g caster sugar
4 egg whites
150g melted butter
100g cubed butter
200g brown sugar


Whip the egg whites until light and fluffy then add the chopped bananas.
Drizzle in the caster sugar until all combined then pour in the melted butter.
Gradually pour in the flour and mix for 1 minute.
Pour the batter into friand tins and bake at 190°C for 15-20 minutes.
In a small saucepan melt the cubed butter and pour in the brown sugar and stir until a smooth caramel sauce is achieved (if the sauce splits you can add about 2 tbsp of cream and whip until smooth.)
Serve the friand with sliced banana and caramel sauce.
