Frozen Banana Fool with Hot Mango Syrup

(Serves 4)
2 frozen bananas, peeled
300ml cream
¼ cup caster sugar
3 drops vanilla essence
1 tin (425g) Mango in Syrup


Put a frying pan on to heat, then add the mango including the syrup and boil for 5-7 minutes. Using a stick mixer, blend the mango. Set aside.
In a blender, place the bananas, sugar, vanilla essence and blend until crumbly in appearance. Next add in the cream and continue to blend until a thick consistency is achieved.
Serve the creamy banana mixture in a pretty glass and top with the hot mango syrup.
