Banana lime cheesecake muffins

(Makes 9)
½ pack of granita biscuits, crushed
150g unsalted butter, melted
4 bananas
250g smooth ricotta
Zest of ½ a lime
Juice of 2 limes
2 eggs
4 tbsp honey


Combine the melted butter and crushed biscuits, then press into the bottom of muffin tray. (6 muffins per tray)
Place the bananas into a blender and pulse until smooth, add the lime juice and zest, eggs, then pour in the honey.
Fold through the ricotta until smooth.
Pour the banana mix into the muffin tray then bake at 190°C for 30 minutes.
