Budget Beef Mignon

(Makes 8)

200g minced beef
2 cloves garlic, finely chopped
1 spring onion, finely chopped
4 slices of bacon, cut in half lengthways
2 tbsp pizza sauce
1 bunch bok choy
Splash of sesame oil


In a bowl, combine the minced meat, garlic, spring onion and pizza sauce with a good massage.

Press the mince into balls of approx. 2 tbsp.
Roll the bacon strip around the circumference and secure with a toothpick. Press the mignon down to flatten slightly.

Place onto a lined baking tray and into a preheated oven at 200°C for 20-25 minutes. Remove toothpicks once cooked.

Rinse the bok choy well and place into a steamer basket for 5 minutes. Drizzle over a splash of sesame oil.

Place bok choy onto serving platter and top with the mini mignon.
