Cheese & Chive Chicken Parcel

(Serves 2)

1 chicken breast fillet
¼ bunch chives, finely chopped
6 slices tomato
6 slices tasty cheese
1 sheet puff pastry


Cut the chicken fillet, widthways into 2cm thick strips.

Line oven tray with baking paper and lay down the pastry sheet.

In the centre of the sheet, place 1 strip of chicken, then slice of cheese beside it, chives, then tomato and continue laying so that cheese and tomato are standing upright. Sprinkle remaining chives over the filling.

Fold pastry up and over and roughly crimp the edges, leaving top slightly open.

Bake in a preheated oven at 210°C for 20 minutes.
